Olive oil and lavender honey are widely used, so too are tomatoes, garlic, olives, capers and aubergines. Ratatouille comes from Nice, bouillabaisse (fish stew) from Marseille; menus also feature bourride (fish soup) and sea urchins. Banon (wrapped in chestnut leaves) and brousse cheeses and sweets like walnut galettes are typical - accompanied by wines such as Vacqueryas, Beaume de Venise and Châteauneuf-du-Pape.
